My name is Chef G.G. and no I am not a professional Chef, I am just your average guy that loves to cook as well as eat. My love of food began with the best food anyone could find. My Mother's and Aunt's kitchen. While these meals were simple, you knew they were prepared with love. That love of food grew as I was fortunate to travel to many different countries while serving in the U.S. Army for 20 plus years.
So, some may ask why did I name this site the Misplaced Cajun. Well, first of all I was born and raised in the heart of Cajun Country, "Lake Charles, LA" which is in Acadiana. Next, the misplaced part comes from the fact that after I retired from the Army I remained in the Mid Atlantic region of the U.S.
So, enough about me.
What is Cajun food?
Many people think that Cajun food is the same as Creole food or that Cajun food equals something blackened, lots of cayenne pepper or whatever that is you get from the mall's food court at the "Bourbon Street Cajun Cafe".

While Cajun and Creole have some similarities, Cajun food is a fusion of Spanish, French, and West African cuisines that uses ingredients that were local to the Acadiana region of Louisiana. So, if you were able to catch it and it didn't eat you or poison you, it was fair game. The staples of Cajun cuisine are its aromatics which include onion, bell pepper, and celery better known as the Holy Trinity. These ingredients represented the Father, Son, and Holy Spirit". In addition to these, garlic, green onion, and parsley were included in these dishes. Truly Cajun food is the essence of home cooking that gives you a warm feeling and makes you think of family.
So why did I create this site? Well, I wanted to highlight all food no matter where it originated and show you that cooking can be easy as well as fun.
Food has a special ability to bring people together. I often find this in my own life, and I hope you will find that this online community feels just as welcoming as a real kitchen. For me, cooking together builds the best communities! Let's get cooking together!
